1. Pandan leaves, ingredients (onion oil, ginger, garlic) and herbs are infused into the oil until they are brown. It is this oil which is then added to the rice, together with stock made from boiling chicken. Do not use chicken fat to cook chicken rice (unhealthy).
2. To ensure the meat is of the perfect texture, use only chickens that weigh between 2 and 2.5 kg.
