Singapore Style Oyster Omelette 蚝煎

This is the Singapore Teochew Oyster Omelette, different from the Taiwanese version, both with history tracing back to 17th century Taiwan recaptured from Dutch occupation. The Dutch burnt all crops to deter the advance of General (郑成功) Zheng ChengGong’s army, the Taiwanese survived by the local seafood Oysters fried with egg – Oyster Omelette 蚵仔煎 / 蚝煎.
