红楼美食: Red Chamber Cuisine

The 18th century author of 红楼梦 “Dream of the Red Chamber “ (Top in the 4 Chinese Greatest Classics) 曹雪芹 Cao Xueqin (The ‘Shakespeare’ of China) was not only a great scholar (although he failed the 科举 Imperial ‘Concours’ Exams), he was also an expert in TCM (Traditional Chinese Medicine) which he recorded in details the healing recipes in the simple cuisine:

1. 火肉白菜汤 (Chinese Cabbage with Ham Soup) : Chinese Cabbage (白菜) is the ‘King of Vegetables’ (菜中之王) with the most nutrition. This soup is ideal for recovering patients or weak persons.

2. 酸梅汤 (Plum Soup): Orange, Lemon, Plum 乌梅 and Grape taste sour but in fact are mildly alkalic in stomach. This soup cures facial pimples due to acidic body, neutralised by this alkalic soup.

3. 疗妒汤 (Cough Healing Soup, or Jealousy Healing Soup) : Pear (梨) soup to cure long cough. It adds extra ‘chen-pi’ (陈皮, dried orange skin) (5 grams) to balance the cooling pear.

4. 虾丸鸡皮汤 (Prawn Balls with Chicken Skins Soup): Why did Qing Emperor 嘉庆 like chicken skins (sans fat) soup ?

Chicken skin has rich elastic proteins which help avoid old-age wrinkles like this woman:
