Boulonge Fisherman’s Chowder

Serve 6-8

Fishes: (1 kg cod, 2 mackerel, 2 whiting)
0.7 kg mussles
2 tablespoons olive oil
2 tablespoons butter
2 onions finely chopped
3 leeks, washed and finely chopped
3 carrots, peeled and thinly sliced
3 garlic cloves, smashed
1 bouquet garni
1 kg potatoes, peeled and thinly sliced
Pepper and salt
