蒜香白酒蛤蛎意大利面 Clams Noodles in White Wine

Pre-cook the noodles at 70% of time stated in the package instruction.

Soak the clams in salt water to throw out sand.

Boil the clams in white wine.

Then add pre-cook noodles into the cooked clams, (not in reversed order ), continue to cook for 2 to 3 minutes.

If you want soupy noodles like the old-time (古早) Hokkien clam noodles in ‘or-peh’ 㮧芭葉 leaf, then add (芶芡) corn- starching to thicken the soup before serving.
