Ratatouille Casserole

Southern France Vegetable Dish – colorful, healthy and tasty !

Simpler instructions:

My first trial: Ratatouille Casserole

Ingredients:
Onions
Garlic
Eggplant
Zucchini green (Squash 西葫芦)
Zucchini yellow
Bell Pepper yellow
Bell Pepper red
Salt
Olive oil
Thyme (or any herbs)
Cheese flakes
Black pepper powder
Water
Tomato paste (1 small can)
Ice water (to soak eggplant slices)

Before Oven:

Oven (375 F =) 190 C for 45 minutes (cover with Aluminum foil) :

Serve with Macaroni (or Couscous) with cheese flake topping

P.S.
To prevent eggplants from brownish (oxidized in the air), soak them in ice water:
