清蒸鱼头

选新鲜鱼: 鱼眼亮(无白), 鱼腮鲜红(有氧)

去腥: 白醋 10分钟。姜片贴魚身。
洒盐入味: 外皮多, 内少

蒸: 水滚后, 蒸10分钟 (鱼眼暴凸)
倒掉 蒸鱼水(腥), 姜片

熱油(酱) 熗 姜丝, 辣椒。上桌。
