煮”Peter鸡” (海南白切鸡)要:
三次提出滚水面, 让肚内温度和外面滚水一样,
♢ 然后关小火 (虾火: 水边起”虾眼”小水泡)整只鸡㓎泡时间, 不盖锅 :

2磅 (0.9 kg) = 20分钟
3磅 (1.3 kg) = 25分钟
4磅 (1.8kg) = 30分钟
[每一磅 +5分钟]

㓎冰水 : 10~15 分钟
