西湖醋鱼 金目魲

材料:

1. 新加坡”草鱼”: 金目魲 (Sea Bass)

  • 做法 (下图之 1+2+3) ; 或
  • 简单做法: 剖开鱼腹, 洗清洁鱼肚, 鱼内外撒盐。在鱼身两面各划2斜刀。煮沸一锅水 (水足够盖鱼身), 水煮10分钟。

2. 羌 (切絲)
3. 葱段
4. 芫茜

调味料 (精华):
A. 白糖, 盐, 黑酱油, 黑醋, 香油 (各一茶匙); 胡椒粉 (少许)
B. 勾芡: 煮鱼原汤 + 调料 (A) + 玉米粉 (corn starch) + 熱葱油
