Family-style Simplified “Buddha Jumps Over The Wall”:

1. 准备:

  • 红葱油 red shallot
  • 炸蒜 garlic
  • 青葱段 onion spring

2. 先炸, 后煮汤头 (Stock)

  • 芋头 yam
  • 鹌鹑蛋
  • 蘑菇片
  • 鱿鱼
  • 先煮酱油(3 汤匙), 入香味
  • 后加 猪大骨高汤
  • 冰糖 (1汤匙)
  • (少许)盐
  • 秘诀:胡椒粉 (2 茶匙)

3. 饔分层装置 Layered (从下到上)

  • [铺底]:笋片
  • 下:胶质料 collagen: 猪脚,排骨 (买现成的)
  • 中:1)过滤后的葱蒜油葱酥
  • 上:芋头
  • [顶层]:猪皮
  • (五加皮或绍兴) 料酒(1汤匙)
  • 黑醋(1 汤匙)

4. 饔口密封保鲜纸,蒸 2小时
