Spanish Paëlla = Chinese Pao Fan
This grand 高级 “Seafood Paella” is the ang-moh equivalent of our Seafood “Pao Fan” (泡饭).
“Paella rice” is round grain, available at NTUC Finest. You can use the normal short- round (Japanese/Taiwan/California) rice instead.
Saffron (藏红花) not good for pregnant lady (miscarriage 流产) ，replace it with more tomato purée (番茄泥) for the red coloring.
Easy to cook, just throw everything into one pot.
Good idea grand dish for festive family reunion dinner on 31/12 or CNY Eve 11/2. Very impressive & appetizing.

Seafood “Pao fan” (泡饭) is between Teochew Porridge / Hokkien Porridge (咸糜) & Cantonese/HK Congee (கஞ்சி), kind of similar to the “wet-version” of Spanish Paella (西班牙海鲜饭).
Spanish Gazpacho Soup 西班牙冻汤 – 降血压良药
不用煮的开胃冷汤 appetizer (aka hors d’oeuvre) Gazpacho, just need a blender, no heating, no boiling!
Main ingredient : Tomatoes
Complemented by bits of : cucumber, red peppers, onion, garlic, croutons (fried bread).
Taste enhanced by : (cummin) , salt, fresh pepper, lime juice, olive oil.
Another small variation : (top with sweet basil, no croutons 烘面包小方块)

Chicken & Mushroom Paella 西班牙雞肉蘑菇飯
You can replace Spanish Rice (available at Cold Storage) by short-grain Japanese rice (松鹤 牌), Spanish sausage by Chinese sausage (腊肠). I prefer tomato sauce (canned tomato paste with some fresh tomato cut into small slices), then the Paella colour will be more appetising reddish (rather than yellowish like Pineapple rice).
